Omani Cuisine is influenced by Arabic, Indian, Asian, Eastern Mediterranean and African cuisine. Fish, chicken, lamb and beef as well as rice dishes are very popular. Here's Chef Ziyad demonstrating how the Shuwa, a traditional dish made from lamb, beef or camel, is prepared and cooked in an underground pit at The Chedi Muscat.

Here’s what you need:

Spice paste:
• 60 gr cumin seeds
• 50 gr coriander seeds
• 10 cloves garlic
• 50 gr chili flakes
• 20 gr turmeric powder
• 15 gr salt
• 15 gr ground cinnamon
• 10 gr black pepper
• 15 gr ground cardamom
• 5 gr tsp ground cloves
• 2 gr tsp ground nutmeg
• 50 ml vinegar
• 75 ml vegetable oil

Shuwa:
• 1 lamb shoulder | salt & pepper to season, spice paste to rub
• Palm bag or jute bag (soaked in cold water)
• Mountain leaves or banana leave
• Smur wood
• Stainless steel wire

Rice:
3 cups of Basmati rice
10 gr cumin seeds
3 cardamom pods
1 pc cinnamon stick,
50 gr raisins, 50 gr pine nuts
